This is the Portuguese version of a dunking cookie. They are delicious, buttery cookies - crisp and not too sweet. A perfect treat to accompany your coffee or tea! They freeze well, too.

Ingredients:
3 cups of Flour (more if needed)
1 cup Sugar
3 Eggs (room temperature)
6 tablespoons Butter
2 teaspoons Baking Powder
1 teaspoon Lemon Zest or Anise Liquor or Anise Extract (Optional)

Instructions:
- Preheat oven to 350 degrees F. Mix softened butter with the sugar until light and fluffy.
- Add the eggs and lemon zest and beat for 1 minute. Add the flour and baking powder to the sugar and mix with a dough hook for about 3 minutes until the batter forms into a ball. You may need to add a little more flour if you find the dough too soft depending on your butter and size of eggs.
- Place smooth dough onto lightly floured surface and shape into flat discs 1/2 inch high.
- Cut dough into strips and roll into 5 inch rope and form a loop (or other shape).
- Lightly grease a cookie sheet (or use parchment paper, like I do), and place the biscuits evenly on the sheet. Bake for approx. 15 - 18 minutes or until slightly golden brown. I like to bake multiple trays for 9 minutes on Convection Bake.
- Let them cool and store. Makes approx. 3 1/2 dozen cookies.
