Balbacua is a polular Beef stew that typically served at roadside eateries. It is said to have originated in Visayan region. It's commonly with beef and collagen-rich parts including ox feet, ox tail, skin or joints, which are slowly simmered until gelatinous and tender in a hearty stew flavored with achuete and tomato sauce.


Ingredients:
1.5kg Beef Trotters
1kg Beef skin
1 cup tomato sauce
1 tbsp achuete powder
1 small can fermented black beans
1 stalk lemon grass
1 tbsp peppercorn
3 pcs Laurel leaves
2 pcs Star Anise
1 pc Beef broth cubes
5g granule seasoning
Fish sauce to taste
Ground Black Pepper to taste
2 tbsp cooking oil
Water
