Singapore Noodles
· 1lb of chicken breast or boneless/skinless thigh
· 3 eggs
· 2-3 stalks of green onions
· 4 cloves of garlic
· ½ a red bell pepper
· ½ a green bell pepper
· 2 cups of shredded cabbage
· 3 tablespoons mild curry powder
· 2-3 tablespoons oyster sauce
· 2-3 tablespoons light soysauce
· 1-2 teaspoons of black pepper
· 4-6 ounces of rice vermicelli noodles (fine or very fine)
· 4-6 TB cooking oil

Place rice vermicelli noodles into hot water for about 3-5 minutes or until soft but not mushy. (Do not place them in boiling water. Noodles can be delicate and may over cook and break easily.) Once done, drain and set aside.

Cut chicken into 1-2 inch pieces. Pour 1-2 Tbsp of soy sauce over the top and let sit for 1-2 hours to marinate. Pour a couple of tablespoons of oil into a wok or pan and cook chicken until brown. Remove from wok/pan.

Mince garlic and set aside. Cut cabbage, peppers, and onions into julienned strips 2 to 3 inches long and ½ inch wide. Dice half of the green onions for garnish (optional) and cut the remaining onions into 2 to 3 inch strips. Set vegetables aside.

In the wok/pan, add 2-3 tablespoons of cooking oil. Once hot, add eggs and scramble. Once eggs are scrambled, add vegetables and saute for 2-3 minutes at medium heat. Add chicken back into the pan with vegetables.
Save the diced green onions for garnish. Now add rice noodles. Use a pair of chopsticks to mix or toss in wok for about 2-3 minutes with the vegetables and chicken. (Using tongs or spatula may break up the fine noodles.)

At this point, add oyster sauce, curry power, black pepper, and light soy sauce. Mix thoroughly with chopsticks for another 2-3 minutes. Once sauces and curry powder are thoroughly mixed through the noodles, your dish is ready to be served.
