Today on Booze On The Rocks, I will show you how to make the Coconut Sunrise. This Malibu Rum Cocktail is very easy to make. The cream of coconut gives a great base to the rum and the orange juice. And the grenadine gives you that fire of a beautiful sunrise. Try this out, and let me know what you think.

COCONUT SUNRISE

2 oz/60 ml Coconut Rum
4 oz/120 ml Orange Juice
2 oz/60 ml Cream of Coconut *
1.5 oz/45 ml Grenadine Syrup**
.5 oz/15 ml 151 Rum

Method

1. In a separate glass, mix the Coconut Rum and the Orange Juice.
2. Add the Cream of Coconut to the bottom of the hurricane glass.
3. Slowly add crushed ice to the glass.
4. Pour the Coconut Rum and Orange Juice mixture onto the crushed ice.
5. Slowly pour the Grenadine on top, so it settles.
6. Float the 151 Rum.
7. Garnish with an Orange Slice.

Cream of Coconut

400 ml Coconut Milk
375 g Sugar
Pinch of Salt

Method

1. Add all ingredients to the sauce pan.
2. Place on low heat on the stove top.
3. Stir until the sugar is dissolved (colour changes from white to partially transparent).

** Grenadine Syrup

240 ml Pomegranate Juice
240 g Sugar
.5 oz/15 ml Orange liqueur

Method

1. Add sugar and Pomegranate juice to a sauce pan.
2. Use low heat and simmer until sugar is fully dissolved.
3. Add the Orange Liqueur.
4. Stir and allow to simmer for another two minutes.
5. Pour into a bottle and allow to cool before use.
