Who doesn't love strawberries! This is a quick and easy way to use them as a delicious keto or low carb treat. The idea came from the desire to have pre-portioned ice cream in the freezer. These are delicious and cost less than if you purchase keto or low carb ice cream treats from the supermarket. This recipe is easily adaptable to your preferences. Leave the fruit out of the recipe and add whatever you like as a topping when you serve (fruit, nuts, coconut shreds, chocolate chips, etc) #strawberryicecream #ketotreat #lowcarbicecream

Strawberry Ice Cream Bites

INGREDIENTS
2 cups heavy whipping cream
4 rounded tablespoons confectioner's erythritol (or sweetener of choice)
pinch of sea salt (1/8 teaspoon)
1 tablespoon vanilla extract
1 1/2 cup strawberries diced small (can smush them if you'd like)
INSTRUCTIONS
Strawberry Ice Cream Bites
Step 1: Add heavy whipping cream and erythritol to a medium sized bowl. Mix with an electric mixer or a stand mixer until it's whipped up well with soft peaks.
Step 2: Add vanilla extract, salt and the strawberries and mix until combined.
Step 3: Scoop out into a silicone muffin mold, fill the mold to the top but not overflowing.
Step 4: Freeze for at least 2 hours, overnight is fine as well.
Step 5: When ready to serve, pop out of the silicone mold, put in a bowl or on a plate and let sit for 3-5 minutes. You can microwave for 10 seconds if you'd prefer. It should be edible with a spoon but not totally melted. Enjoy!
Step 6: Store in freezer in a closed container until ready to eat. They are good for a month if they last that long.
NOTES:
Note on sweetness: Everyone has a different tolerance for how sweet they like this. Mix in less sweetener if you think you'll like it less sweet. You can also use some stevia drops or whatever sweetener you like to use. I find the confectioner's swerve to be easy to use. TASTE the mixture after whipping it and before you add the rest of the ingredients so you can adjust the sweetness if needed.

This began as an attempt to portion out frozen ice cream treats. If you don't have a silicone muffin mold, use cupcake liners inside a metal muffin pan. If you have freezer safe small containers you could use those as well. However a silicone muffin mold is super easy to use and they pop out easily.

This recipe is easily adapted. You can substitute other berries or flavors. If you leave out the berries and freeze it as vanilla you can add chopped nuts, fruits or seeds on top before serving.
