If you love anything with Japanese teriyaki sauce, Roland's Garlic Soy Sauce Chicken Chop is perfect for you. The concept is the same, except that we didn't use any alcohol in our recipe, so it's suitable for those of you who can't take alcohol. These chicken chops can be served with rice or as a dish to share. We purposely made the chicken skin side crispy so that they remain slightly crunchy even after being coated with the sauce. Super super yummy.

Ingredients:
Makes 2 portions but good for 3 pax

Marinated chicken

2 boneless chicken thigh (total weight 550g or 19.4 oz) - any meaty part of a chicken can be used
1 teaspoon salt
1 teaspoon black pepper
Some cornflour

Sauce
-------
120ml (4.05 fl oz) hot water (room temperature is also fine)
2 tablespoons brown sugar (you can use white sugar if you don't have brown)
1 tablespoon oyster sauce
1.5 tablespoon light soy sauce
1 tablespoon premium dark soy sauce
2 stalks of spring onion stem - lightly crushed
2 cloves garlic - lightly crushed

Garnishing - optional

The one we use has a really nice consistency - it's not too thick but not too watery. It's also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)
