Ingredients:

Soya chunks 2 cups
Water as required
Salt 1 tsp
Oil 2 tbsp
Dry red chilli 1 pc
Bayleaf 2-3 pcs
Cinnamon 1 inch
Cloves 4-5 pcs
Black pepper 6-7 pcs
Green cardamom 4-5 pcs
Onion chopped 1 cup
Garlic chopped 2 tbsp
Ginger chopped 1 tbsp
Chana dal soaked ½ cup
Green chilli chopped 1 tbsp
Coriander stems 7-8 pcs
Ginger & garlic paste 2 tbsp
Salt 1 tsp
Red chilli powder 1 tsp
Turmeric powder 1 tsp
Coriander powder 2 tsp
Water as required
Onion chopped ½ cup
Coriander chopped 1 tbsp
Green chilli chopped 1 tbsp
Ghee 1 tbsp
Wheat flour for coating

Method:

1. Boiling the Soya Chunks:
Start by heating a pan and adding water. Once the water is boiling, toss in some salt and the soya chunks. Let them simmer away for about 4-5 minutes until they're tender. Then, drain them and pop them into a mixer jar. Give them a good grind until they turn into a fine paste.

2. Preparing the Spice Mix:
Now, in another pan, heat up some oil. Once the oil is hot, throw in some dry red chilli, bay leaf, cinnamon, cloves, black pepper, and green cardamom. Let them sizzle and release their aromatic flavours. Next, add chopped onions and cook them until they turn a lovely golden brown. Toss in some chopped garlic and ginger, and cook until they become fragrant.

3. Cooking with Chana Dal:
Add in some soaked chana dal and let it cook for a few minutes until it softens up. Then, add in chopped green chillies, coriander stems, and ginger-garlic paste. Keep stirring and cooking everything together until they're well combined.

4. Seasoning and Adding Soya Mix:
Sprinkle in some salt, red chilli powder, turmeric powder, and coriander powder. Give everything a good mix and pour in a bit of water to create a nice gravy. Now, add in the ground soya mixture and let it cook until the excess moisture evaporates, and the mixture becomes dry.

5. Cooling and Grinding the Mixture:
Once everything is cooked through, transfer the mixture onto a plate and let it cool down. Once it's cooled, put it back into the mixer jar and grind it into a smooth paste.

6. Final Assembly:
Transfer the ground mixture back onto the plate and add in some chopped onion, coriander, and green chillies. Mix everything together until well combined. Now, divide the mixture into small portions and shape them into tikkis. Lightly coat each tikki with wheat flour.

7. Shallow Frying:
Heat up a flat pan and add some ghee. Once the ghee is hot, place the tikkis onto the pan and shallow fry them until they turn golden brown and crispy on the outside.

8. Serving:
Once the tikkis are done, remove them from the pan. Delicious soya bean kebabs are now ready to be served! Pair them with some tangy green chutney for an extra burst of flavour.
