Hi, this video shows a permanent fix for the problem of the Joy Con coming off the Switch without pressing the release buttton. I show the full process of replacing the damaged latch with a metal one purchased from eBay.
This WILL VOID your warranty so do it at your own risk.
Nintendo may have made the latch out of plastic as an intended weak point so it breaks rather than breaking the more expensive Switch, if this is true then replacing them with metal could lead to damage on the actual Switch if you drop it. If you are worried then you can buy plastic replacement latches instead.
The video shows the complete process including testing.
