Bombay Potatoes are probably one of the most popular side dishes on any Indian Restaurant Menu. I have formulated a very quick and easy recipe that can be produced in a very short time. Flavours, textures and colours are all abundant in this delicious savoury dish!!

Ingredients
1 Tbsp Butter Ghee Oil
1 Tbsp Coconut Oil ( Feel free to use Veg oil)
2 Very Large Waxy Potatoes ( Cyprus or Harmony Recommended)
1.5 Tsp Cumin Seeds
1 Tsp Turmeric Powder
1 Tsp Chilli Powder
1 Tsp Yellow Mustard Seeds
0.5 Tsp Black Mustard Seeds
0.5 Fennel Seeds
1 Tsp Mild Madras Curry Powder
0.5 Tsp Coriander Powder
Large Pinch Curry Leaves
1 Tsp Salt
0.5 Tsp Sugar
2 Large Cloves Garlic Finely sliced
1 Tbsp Tomato Puree (mixed withe water)
(Some water on the side just in case of burning)

Decoration
1 Very mild Red Chilli
Chopped fresh Coriander
