Tacos Al Pastor Recipe

4-5lbs Pork Shoulder
3 Tablespoons Achiote Paste
3 Tablespoons Chili Powder
2 Tablespoons Garlic Powder
2 Tablespoons Onion Powder
1 Tablespoon Oregano
1 Tablespoon Cumin
1 Tablespoon Salt
1 Tablespoon Pepper
1 Tablespoon Chipotle Pepper in Adobo (About 2 peppers)
3/4 Cup Vinegar
1 Cup Pineapple juice
1 Pineapple
Tortillas (Your favorite type)
Skewers
Garnish: Onion, Cilantro

Instructions:

Slice your pork should into about 1/2 inch thick pieces and place in a bowl or ziplock bag.

In a separate bowl, combine Achiote Paste, Garlic Powder, Onion Powder, Oregano, Cumin, Salt, Pepper, Chipotles, Vinegar, and Pineapple Juice. (This will be your marinade)

Tip: Make sure you mix it well you want to break down all the Achiote Paste. You may have to get in there with your hands to break it up. Do this before you add the liquid.

Pour marinade over your sliced pork and let that marinate in the refrigerator for minimum 2 hours and up to 24 hours if you have the time!

Pre heat oven to 350 F

Once your pork is done marinating. Prepare your pineapple by cutting off the top, bottom, and sides. Then slice your pine apple into about 1/4 in circles. (it's ok to leave the core of the pineapple)

Now begin stacking your pineapple and pork on a skewer.

Place a pineapple circle at the bottom of your skewer and then begin stacking the pork one on to of the other until you get all the pork on there and then top it with another pineapple circle.

Tip: while you are stacking make sure everything is balanced. This helps to keep your "stack" from falling over in the oven.

you may have to add multiple skewers to keep "stack" balanced


Place your stack on an oven safe baking sheet and place in the oven for 2 hours. You want your meat to have a nice, smokey, red color.

Once your Pork stack is done, pull it out of the oven and begin cutting your meat up into taco sized portions.

(You can cut it off the skewer if you are tying to impress somebody, or you can just take it off the skewer and chop it up)

Make sure you are chopping up the pineapple too and save it for topping or mixing it in with the meat!

Start building you taco!

I like to cook my tortillas until they are brown and crispy on one side and soft on the other side.

Then I fill it up with the pork, pineapple, onion, and cilantro.
