Ingredients:
Fresh tuna soy sauce - 1 tsp
orange juice - 1 cup. yuzu 2 tsp Shiso/Oba leaves wasabi paste
Chives avocado - half canola oil ( 2x of the weight of the avocado)

For caviar: - gelatin sheets x 4 sugar - 3 tsp yuzu juice - 2 tsp

other items: - syringe or small pastry bag extra cold oil (leave it in the fridge over night)
