How to blacken fish in a cast iron pan.
I recommend doing this outside if possible.
If you are cooking at the right temp there will be a lot of smoke.
I use Paul Prudhommes Redfish Magic - it's my go to seasoning for blackening fish, shrimp, or even chicken.
You'll also need some stick butter - I use unsalted. Here I used about a stick and a half. You'll want to melt the butter and add some redfish magic to it.
Then some fish. For this cook I went with catfish. Any white fleshed fish - like catfish, cod, snapper, etc. would work.
Get the fish seasoned liberally,
Get your cast iron super hot,
Throw some butter in and then your fish.
Flip after 2.5 - 5 minutes, depends on the heat.
baste with the butter mixture regularly.
Flip as needed / baste / repeat until you reach your target temp.

Serve.
