These cheesy biscuits are absolutely delicious and my family requests them often! Best of all, they take minutes to make and don’t require too many ingredients. Enjoy!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Recipe adapted from Cheddar Bay Biscuits by Joe Duff- The Diet Chef
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients
-2 Tbsp homemade butter, melted (or French butter or ghee)
-2 Tbsp organic cream cheese, softened
-1 pastured egg
-1 cup gruyere cheese, grated
-1 1/2 cups of blanched almond flour
-1 tsp baking powder
-Melted garlic butter and chives (optional)

Tools/Supplies
-Baking sheet
-Silpat mat or parchment paper
-Large mixing bowl
-Hand mixer
-Food processor
-Rubber spatula
-Cooling rack

Method
1. Line a baking sheet with a Silpat mat or parchment paper and preheat the oven to 450° F.
2. Using a hand mixer, mix the butter, cream cheese, and egg in a bowl until smooth. Set aside.
3. In a food processor, process the cheese, almond flour, and baking powder until incorporated.
4. Pour the flour mixture into the mixing bowl and stir until it becomes a wet dough.
5. Use a tablespoon (or ice cream scoop for larger biscuits) to scoop the dough into your hands.
6. Roll the dough into a ball and gently press/shape into a biscuit.
7. Place the biscuit onto the baking sheet and continue shaping the rest of the dough into biscuits.
8. Put the baking sheet into the oven and bake for 10 minutes.
9. Remove the tray from the oven and let the biscuits rest for a minute before transferring to a cooling rack.
10. Brush with melted garlic butter and sprinkle with chives. Enjoy!
