Daikon Radish
Recipe:
2 mid size Korean radish 
1 large carrot
2 cups boiling water
2 cups apple cider vinegar or white vinegar
3/4-1 cup allulose sweetener or maple syrup 
2 tbsp salt (for sweating process )

Peel and cut both daikon radish and carrot into small thin matchsticks. Add salt to veggies and toss together in a colander sitting on top of a large bowl. Let the veggies sweat excess liquid for 30 min. Heat up over the stove on simmer or microwave water, vinegar and sweetener. Add daikon and carrots in canning jars. Pour liquid until jars are filled and close lid tightly. Store in the fridge.


Taiwanese pickled cabbage
Recipe:
1/2 cabbage
1 large carrot
2 cups boiling water
2 cups apple cider vinegar or white vinegar
3/4-1 cup allulose sweetener or maple syrup 
2 tbsp salt (for sweating process )
1-2 garlic cloves

Remove core from cabbage and cut into chunk size pieces. Cut the carrot into half moon slices. Add salt to veggies and toss together in a colander sitting on top of a large bowl. Let the veggies sweat excess liquid for 30 min. Heat up over the stove on simmer or microwave water, vinegar and sweetener. Add cabbage and carrots in canning jars with a 1/2 to whole garlic clove in each jar. Pour liquid until jars are filled and close lid tightly. Store in the fridge.


Pickled Purple Cabbage
Recipe:
1 small purple cabbage
2 cups boiling water
2 cups apple cider vinegar or white vinegar
3/4-1 cup allulose sweetener or maple syrup 
2 tbsp salt (for sweating process )
1 tbsp whole black peppercorn (optional)

Remove core from cabbage and cut into chunk size pieces. Add salt to veggies and toss together in a colander sitting on top of a large bowl. Let the veggies sweat excess liquid for 30 min. Heat up over the stove on simmer or microwave water, vinegar and sweetener. Add cabbage and black peppercorn (optional) in canning jars. Pour liquid until jars are filled and close lid tightly. Store in the fridge.
