Senaga Kattu Charu is a traditional South Indian dish that is known for its tangy and flavorful taste. It is also known as Senagapappu Charu or Kattu Charu. Here's a basic recipe for making Senaga Kattu Charu:

Ingredients:

• 1 cup Channa dal
• 1 small lemon-sized ball of tamarind
• 3-4 cups of water
• 1 small onion, finely Sliced
• 1-tomato
• 2-3 dry chilies
• 4-6 cloves of garlic, crushed
• A few curry leaves
• 1/2 teaspoon turmeric powder
• 1/2 teaspoon red chili powder (adjust to taste)
• 1/2 teaspoon mustard seeds
• 1/2 teaspoon cumin seeds
• A pinch of asafoetida (hing)
• 2 tablespoons oil
• Salt to taste
• Chopped coriander leaves for garnish

Instructions:

1. Wash the Channa dal thoroughly and pressure cook it with 2 cups of water until it becomes soft and mushy. Mash the cooked dal and keep it aside.
2. Soak the tamarind in 1 cup of warm water for about 10-15 minutes. Squeeze the tamarind to extract the pulp, then discard the solid bits and keep the tamarind extract aside.
3. Heat oil in a deep-bottomed pan or kadai. Add mustard seeds and let them splutter. Then, add cumin seeds, crushed garlic (if using), curry leaves. Sauté for a few seconds.
4. Add sliced onions and green chilies. Sauté until the onions turn translucent.
5. Now add tomato cook until the tomato is cooked
6. Now, add the tamarind extract to the pan along with 1-2 cups of water (adjust the water quantity based on how thin or thick you want the charu to be).
7. Add turmeric powder, red chili powder, asafetida and salt. Mix well and let it simmer for 8-10 minutes on medium heat, allowing the flavors to blend.
8. Add the mashed Channa dal to the tamarind mixture and stir until well combined. Let it simmer for another 5-7 minutes, stirring occasionally.
9. Adjust the consistency of the charu by adding more water if needed. Check the seasoning and adjust according to your taste preferences.
10. Once done, garnish with chopped coriander leaves.
11. Serve hot Senaga Kattu Charu with steamed rice or enjoy it as a soup or stew.

Note: You can also customize the spiciness and tanginess of the dish by adjusting the amount of tamarind pulp and spices according to your taste. Additionally, some variations include adding tomatoes or tempering with additional spices like fenugreek seeds for added flavor.
