A spice is a seed, fruit, root, bark, or other plant substance primarily used for flavoring or coloring food. Spices are distinguished from herbs, which are the leaves, flowers, or stems of plants used for flavoring or as a garnish. Spices are sometimes used in medicine, religious rituals, cosmetics or perfume production.
Culinary herbs are distinguished from vegetables in that, like spices, they are used in small amounts and provide flavor rather than substance to food.
Today is a great day to look into your spice cupboard or filter through your spice rack to see if you have anything that is expired. Dried herbs and spices degrade over time. One easy way to test your spices is to open the container and take a whiff. If you can't smell anything, you probably need to replace it.

It was way back in 25,000 BC that the early humans gained significant knowledge of plants and herbs. They found some to be medicinal, some to be hallucinogenic, and some to be delicious! They may have even practiced a simple form of horticulture.
In 2000 BC, the spice trade flourished throughout the Indian subcontinent and Asia with pepper, cinnamon and fresh herbs.
It was in 800 that Emperor Charlemagne compiled a list of 74 different herbs that were to be planted in his gardens. The connection between herbs and health is important already in the European Middle Ages. The cookbook 'The Forme of Cury' promotes extensive use of herbs, including in salads, and claims in its preface "the assent and advisement of the masters of physic and philosophy in the King's Court."
Spain and Portugal were interested in seeking new routes to trade in spices and other valuable products from Asia. The control of trade routes and the spice-producing regions were the main reasons that Portuguese navigator Vasco da Gama sailed to India in 1499. He found their black pepper to be cheaper than Italy's and started a new spice trade route. About the same time, Columbus returned from the new world, telling his investors about the new spices in the Americas. Allspice, Chili Pepper, Vanilla, and Chocolate.
During the 1600s, selective breeding was invented, which changed plant size and flavor away from the wild plant and for the first time, herbs and vegetables were separated.
