Schezwan Chicken Spring Rolls

Ingredients for Schezwan Sauce:
Red chilies (soaked) 25-30
Garlic cloves 4-5
Ginger pods 1-2
Brown sugar 1 tbsp
Ketchup 1/2 cup
Soy sauce 2 tbsp
Black pepper powder 1 tsp
Vinegar 1 tbsp
Salt 1 tsp
Sesame oil 1 tsp

Ingredients for Spring Roll Mixture:
Oil 3 tbsp
Garlic (Chopped) 1 tbsp
Boneless chicken strips (350 g)
Capsicum (julienne) 1 cup
Carrot (julienne) 1 cup
Band gobhi (julienne) 1 cup
Schezwan sauce 1/4 cup
Salt 1 tsp
Black pepper powder 1 tsp
White pepper powder 1 tsp
Ingredients for Spring Roll:
Roll patti as required
Flour mixture (all-purpose flour 2 tbsp + water 4 tbsp)
Spring roll mixture as required
Oil (for frying) as required

Directions for Schezwan Sauce Preparation:
1. In a jar add red chilies, garlic, ginger, brown sugar, ketchup, soy sauce, black pepper powder, vinegar, salt, sesame oil and blend it well into a smooth paste. Set aside.
Directions for Spring Roll Mixture Preparation:
2. In a wok heat oil and add garlic. Sauté for a minute. Now add chicken and cook until chicken changes color.
3. Now add capsicum, carrot, cabbage, and cook for a minute
4. Add schezwan sauce, salt, black pepper powder, white pepper powder and cook for another minute. Your Spring Roll Mixture is ready. Set aside.
Directions for Spring Roll Preparation:
5. Take a roll patti and brush flour mixture on the edges of the roll patti.
6. Now fill the center vertically with spring roll mixture.
7. Roll it well into roll shape and deep fry until crispy and golden brown.
8. Your Schezwan Chicken Spring Rolls are ready. Serve and enjoy.

Cooking time: 20-25 mins
