Bunny Chow Recipe:
First toasting of whole spice
2 whole star anise
1 cinnamon stick
3 whole cardamom pods
1/2 tsp fennel seeds
1/2 tsp cumin seeds
1 1/2 tsp coriander seeds
1/3 cup butter or oil (I used clarified butter)
1 large sweet onion
5 cloves of minced garlic
1 thumb-sized piece of minced ginger
2 green chilis cut in half
5 sprigs of fresh thyme
5 tbsp tomato paste (in summer I would use fresh tomatoes)

Second toasting of ground spice:
2 teaspoons garam masala
½ teaspoon cumin powder
1 teaspoon red chili flakes
1 teaspoon coriander powder
3 tablespoons chili powder or masala
2 teaspoon turmeric powder
10 curry leaves

Meat and vegetables:
1/2 grated Yukon gold potato
3 pounds lamb (for beef you can use chuck roast, for chicken use thighs)
4 medium or 2 large Yukon gold potatoes cut into 1-inch cubes (save 1/2 for grated potato)
2 tbsp sliced coriander stalks
4 cups water

To serve:
1 chunk of white bread hollowed out
Freshly sliced cilantro
