My parsley patch has been doing great this year, but it did get a little out of control. So I decided to make some jars of dried parsley for Christmas gifts. Everyone loved their parsley and commented on the bold color and outstanding aroma, so I thought I would share my easy method here.

First and foremost, I want to emphasize that there are many different methods of drying herbs. This method is my favorite for maintaining color, flavor, and nutrients. Some people just hang parsley to dry as is, some people use the oven etc. Once dry, I prefer to crumble the leaves with my (clean) hands as I believe the blender/food processor can cause it to lose some flavor. You could probably use a mortar and pestle. I have also heard of people putting the parsley in parchment paper and then going over it with a rolling pin. I have found that crumbling the leaves with my hands is just easier and kind of meditative in a weird way.
