Ingredients:-
2 Large Eggplants ( total weight 3 lbs or 1.300 grams) or more
8 large cloves of garlic sliced
2 Tsp dried oregano
3 Long dried red chilies or 1 tsp crushed red pepper
Extra virgin olive oil
2 Medium mason jars
1 Cup of Salt
