In this video I will be showing you how I like to make my two FAVOURITE Mac and cheese recipes... 1) French onion soup Mac and cheese 2) Nashville hot chicken and gochujang spiced Mac & cheese. These are without a doubt two recipes that just don't miss and never fail to please! The perfect dish for a special occasion, thanksgiving or Christmas. Enjoy!

French Onion Mac & Cheese:

Onions:
3 white onions, julienned
Few knobs of unsalted butter, 65g
Pinch of salt
1 tbsp thyme, needles finely chopped
300ml beef stock

Breadcrumbs:
1 small baguette
1 tbsp finely chopped thyme
3 tbsp olive oil
Pinch of salt

Mac & Cheese Base:
110g unsalted butter
110g all purpose flour
1.1l whole milk
100g gruyere cheese
100g mozzarella cheese, grated
1 tsp dijon mustard
5 gratings nutmeg
Salt & pepper
500g spirali (cavatappi) pasta

Nashville Hot Chicken Mac & Cheese

Mac & Cheese Base:
110g all purpose flour
110g unsalted butter
1.1l cold whole milk
100g cheddar cheese
100g Red Leicester
100g mozzarella cheese, grated
1 tsp dijon mustard
2 heaped tbsp gochujang paste
1/2 tsp miso pste
Handful of parsley, finely chopped
Half a bulb of garlic, grated
Salt & pepper, to taste
500g spirali (cavatappi) pasta

Fried Chicken:

5 chicken thighs
250ml buttermilk
1 tsp garlic powder
Sea salt
Splash of pickle juice

1 cup rice flour
1 cup plain flour
Large pinch of salt
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder

Nashville Hot Sauce:
2 tsp cayenne pepper
2 tsp smoked paprika
1 tsp garlic granules
1 tsp onion granules
1 tbsp brown sugar
1 tsp honey
1 cup of oil
