Qeema Bharay Karelay (Stuffed Bitter Gourd) is a traditional Pakistani dish packed with flavor! In this short, I’m sharing how to perfectly prepare karelay stuffed with spicy minced meat—without bitterness and with rich masala gravy. A must-try family favorite! ❤️

🥒 Ingredients for Qeema Filling:
8–9 bitter gourds (karelay), peeled
Salt (for removing bitterness)
1 kg minced meat
1 onion (chopped)
1 tbsp salt (adjust to taste)
1 tsp cumin seeds
½ cup yogurt
1 tsp garam masala
1 tsp black pepper
1 tbsp coriander powder
1 tbsp ginger-garlic paste
1 cup water
🥘 Ingredients for Gravy:
4 large onions (fried until translucent)
2–3 tomatoes (chopped)
Green chillies
Salt (to taste)
Red paprika powder
Turmeric (haldi)
Leftover minced meat filling
Fried chopped potatoes (optional but flavorful!)
¼ cup milk
Fresh coriander
Dry fenugreek leaves (kasuri methi)
👩‍🍳 Method:
➡️ Prepare the Karelay:
Peel 8–9 bitter gourds, sprinkle salt generously, and leave for 2 hours to reduce bitterness.
After 2 hours, wash thoroughly and set aside.
➡️ Prepare Qeema Filling:
Heat oil and fry chopped onion.
Add minced meat, salt, cumin seeds, ginger-garlic paste, black pepper, coriander powder, yogurt, and garam masala.
Fry until color changes and oil separates.
Add 1 cup water and cook until qeema becomes soft and fully cooked.
Allow to cool completely.
Now fill the washed karelay with prepared qeema.
➡️ Fry the Karelay:
Fry the stuffed karelay until light golden and set aside.
➡️ Prepare the Gravy:
Fry onions until translucent.
Add tomatoes, green chillies, salt, paprika, haldi, leftover qeema, and optional fried potatoes.
Cook until masala becomes rich and aromatic.
Add the fried karelay into the gravy.

Pour in ¼ cup milk (this enhances the flavor and removes bitterness).
Steam on low flame until fully tender.
➡️ Garnish:
Top with fresh coriander and crushed dry fenugreek leaves.
