Ingredients:
1 Tbsp olive oil
cajun seasoning
1 lb andouille sausage, sliced into rings
8-10 boneless, skinless chicken thighs
2 14.5 oz can chicken broth
2 14.5 oz can fire roasted diced tomatoes with garlic
1/2 - 3/4 cup heavy cream
6 oz package mushrooms, sliced
1 16 oz box penne pasta

Directions:
Preheat oven to 400 degrees
In hot skillet, brown sausage. Remove from pan and set aside. Leave oil in pan. Season chicken thighs with cajun seasoning. Brown chicken in oil left in pan. Don't worry about them getting done at this point. Remove from skillet to a baking sheet lined with a wire rack. Bake in oven for 15-20 minutes until done, or internal temperature reaches 165 degrees.
To oil left in pan, add chicken broth, heavy cream, fire roasted tomatoes, and mushrooms. Cover and bring to a boil.
Add pasta. Cook for 8 minutes. Add chicken and sausage tucking them into the broth. Cover and cook 4-5 more minutes.
Serve with garlic bread and a salad if desired.
