I'm so excited to share this delightful *Apple Cinnamon Loaf Cake* recipe with you. This cake is packed with tender apple chunks and warm cinnamon spice, making it the perfect treat for cozy afternoons or any special occasion.

Ingredients (Apple Cinnamon Loaf Cake):

Apples:
2–3 medium apples, peeled and diced
50 g (¼ cup) light brown sugar
1 tsp ground cinnamon

Cake Batter:
100 g (½ cup) light brown sugar
45 g (3 tbsp) butter, melted and cooled
40 g (¼ cup) sunflower or vegetable oil
80 ml (⅓ cup) milk, room temperature
2 eggs, room temperature
½ tsp vanilla extract
210 g (1¾ cups) all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
¼ tsp salt

Cake Pan Size:
22 x 13 x 7 cm (9 x 5 inches)

Prepare the Apples:
1. In a medium bowl, toss the diced apples with 50 g of light brown sugar and 1 tsp of ground cinnamon.
2. Let the mixture sit for 15 minutes to release the apple juices and infuse the flavors.

Prepare the Batter:
1. In a large bowl, whisk together 100 g of light brown sugar, melted butter, and sunflower oil until smooth.
2. Add the milk, eggs, and vanilla extract. Mix well.
3. Sift together the flour, baking powder, baking soda, ground cinnamon, and salt.
4. Gradually fold the dry ingredients into the wet mixture until a smooth batter forms.

Assemble the Cake:
1. Preheat your oven to 350°F (180°C).
2. Grease your cake pan or line it with parchment paper.
3. Pour half the batter into the prepared pan and spread it evenly.
4. Scatter ⅔ of the apple mixture (with a bit of the juice) evenly over the batter.
5. Pour the remaining batter over the apples and spread to cover.
6. Top with the remaining apples and drizzle a little of the juice over them.
7. Use a knife or skewer to gently swirl the batter and apples, ensuring you reach the bottom of the pan.

Bake the Cake:
1. Place the pan in the preheated oven and bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
2. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
