"A5" Graded Wagyu Beef is considered the best in Japan ー but what does that score really mean? We'll go inside to talk to the Wagyu Beef inspectors on the job at the Yonezawa Meat Processing Center to learn how they do it using the BMS (Beef Marbling Standard) and Beef Yield. After inspection and grading, we'll see them cut and distribute the beef to restaurants and supermarkets and try some of the A5 Wagyu special dishes famous in Yonezawa like its Gyu Nabe -- also known as Sukiyaki.

Japanese Wagyu Beef is quite different from other beef around the world and within Japan, there are so many regional brands. It's hard to know what the difference is between Kobe Beef and say, Yonezawa Beef other than the branding, but there are factors that can change the taste like climate, elevation, feed, housing conditions, treatment of livestock, and water.
