Mushroom Galouti Kebab Recipe
Ingredients:
For the Kebab Mixture:

250g mushrooms (finely chopped or grated)
1 medium onion (finely chopped)
2-3 garlic cloves (minced)
1-inch ginger (grated)
2 green chilies (finely chopped)
1/2 cup roasted gram flour (besan) or bread crumbs
1/4 cup boiled and mashed potatoes
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp garam masala
1/4 tsp black pepper powder
1/4 tsp nutmeg powder (optional)
1/4 tsp cardamom powder
Salt to taste
2 tbsp ghee or oil
For Garnish and Serving:

Mint-coriander chutney
Onion rings
Lemon wedges
Instructions:
Prepare the Mushroom Mixture:

Heat 1 tbsp ghee or oil in a pan. Add chopped onions, ginger, garlic, and green chilies. Sauté until golden.
Add the chopped mushrooms and cook until all the moisture evaporates.
Spice it Up:

Add cumin powder, coriander powder, garam masala, black pepper, nutmeg, and cardamom powder. Mix well and cook for another minute.
Combine and Bind:

Remove from heat and let the mixture cool slightly.
Add mashed potatoes, cashew paste, and roasted gram flour. Mix until the dough holds together. Adjust salt if needed.
Shape the Kebabs:

Grease your hands with oil and shape the mixture into small, flat round kebabs.
Cook the Kebabs:

Heat 1 tbsp ghee or oil in a non-stick pan or tawa.
