Ingredients:
1/2 cup of cooked quinoa
1/2 cup of chopped lettuce
2 medium tomatoes, diced
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1 onion, thinly sliced
1 small carrot, thinly shaved
Spring of dill, chopped
Dressing:
2 tbsp of lime juice
2 tbsp of olive oil
1/2 tsp of salt
1/4 tsp of black pepper
1 tsp of honey
Preparation:
All you need to do is boil quinoa 15 minutes in a pot, add pinch of salt.
In a large bowl, toss the quinoa, carrot, lettuce, tomatoes, dill, bell peppers, and onion together.
In a small bowl, whisk the lime juice, honey, olive oil, salt, and black pepper until well combined.
Drizzle the dressing over the salad and toss to coat.
