Ingredients:
1. Longganisa Mixture
600 grams - ground pork collar (70% lean meat + 30% fat)
1 tsp - coarse salt
1/2 cup - sugar
1 tsp - pepper powder
2 tsp chili powder
2 tsp - annatto/ achuete powder
1 tbsp - soy sauce
2 tbsp - liquid seasoning
1/4 cup - vinegar
1/4 cup - garlic
2 tbsp - cornstarch
1 - air-tight container

2. Wrapping Longganisa
6 inches x 4 & 1/2 inches - wax paper size per 2 tbsp longganisa mixture

3.Curing & Storage
4. Steam Frying
2 tbsp - olive oil
9 pcs - skinless longganisa

22 pcs = Total longganisa made @ 2 tbsp/ longganisa
Cooking time: 30 minutes (low flame)
Serving for 9pcs longganisa: 2+people
