Black soyabean (haku musya), smoked meat (chhoela), boiled potato marinated with a pickle (aalu achar), egg (anda), black lentil squishy fried pancakes (bara), green vegetable (saag), ginger (aduwa), garlic (lasun), Chhaang or alcohol. Newar people always prepare this food especially
during festivals, celebrations, and other rites and rituals. Although Samay Baji is traditionally associated with Newars, nowadays, one can taste this dish in Newari restaurants and other restaurants as a "Newari khaja set". Samay Baji has already gained its popularity in Nepal and it is famous in foreign countries also. So, where and how did this dish come from?
Back then, most of the Newar people were merchants, goldsmiths, priests, blacksmiths whereas the majority of them were farmers. They used to work all four seasons in a year for their living. Electricity and gas were not available at that time like today. The source of the burning fire was
logs of wood which was tedious and time-consuming work. So, only two meals were cooked on a daily basis. One before going to work and one after reaching home in the evening. There was no concept of breakfast at that time. Newar's used to stay in a closed society with their house
built next to each other but their farms were quite far. One had to walk for an hour just to reach the farm. There was nothing, except for a small hut, to give them shade in the sun and cover from the rain. Since they ate their meals early in the morning, they took some snacks as their food to eat during the mid-day. These snacks were made such that they did not have to be re-heated or re-cooked. That's why foods like "Chyura", "Chhoela", "Bhatmaas", "Saag", and so on were made. These snacks were made not only because of their taste but for their nutritional advantages as well. For example, ginger is good for acidity and gas problems, black soybean reduces the risk of heart diseases, mustard oil used in making "chhoela" helps in killing germs, and green vegetable is a good source of vitamin.
