Chicken Tikka Masala
For Chicken Tikka:
Ingredients:
• 1.5 kg boneless chicken thigh pieces
• 2 tbsp mustard oil
• 2 tbsp ginger garlic paste
• 1 tsp turmeric powder
• 2 tsp red chili powder
• 2 tsp cumin powder
• 2 tsp coriander powder
• 1/3 cup yogurt
• 1 tbsp lemon juice
• 1 tbsp kasuri methi
• Salt, to taste
Instructions:
1. In a paraat, marinate the chicken with mustard oil, ginger garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, yogurt, lemon juice, kasuri methi, and salt.
2. Mix well and let it marinate for 10-15 minutes.
3. Heat a pan or skillet, cook the chicken pieces until soft and tender.
4. Optionally, char the chicken on an open flame with some ghee. Cover and let it rest.
For Base Gravy:
Ingredients:
• 2-3 tbsp ghee
• 1 cinnamon stick
• 4-5 green cardamoms
• 2 tsp cumin seeds
• 1 bay leaf
• 4 medium onions, quartered
• 6-7 medium tomatoes, roughly chopped
• 1/4 cup cashew nuts
• Handful of coriander stems
• 6-7 dried red chilies
• 2 tsp red chili powder
• 1 tsp turmeric powder
• 2 tsp cumin powder
• 2 tsp coriander powder
• Salt, to taste
• 2 cups water
Instructions:
1. In a Kadhai, heat ghee and add the cinnamon stick, green cardamoms, cumin seeds, and bay leaf. Let them crackle.
2. Add the onions, tomatoes, cashew nuts, coriander stems, and dried red chilies. Mix well.
3. Add the red chili powder, turmeric powder, cumin powder, coriander powder, and salt.
4. Add water and cook until the tomatoes are soft.
5. Transfer the mixture to a mixer grinder and blend until smooth. Strain the gravy.
For Chicken Tikka Masala:
Ingredients:
• 2-3 tbsp ghee
• 2 tsp cumin seeds
• 2 tbsp chopped garlic
• 2-3 slit green chilies
• 5-6 medium onions, chopped
• 2 tsp red chili powder
• 1 tsp turmeric powder
• 2 tsp coriander powder
• 2 tsp cumin powder
• Splash of water
• 4-5 medium tomatoes, chopped
• Prepared makhani gravy
• 3 tbsp fresh cream
• Handful of kasuri methi
• Chicken tikka pieces (prepared earlier)
• 2 tbsp honey or nolen gur
• 2 tbsp cream
• Handful of fresh chopped coriander leaves
