Theory: Apart from his appearance, there is one line from the TFA novelization that seems to really define Snoke's age.... Kylo Ren, I watched the Galactic Empire rise, and then fall.
But what if he watched it through studies, intensive schooling, research. Snoke strikes me as a thinker, a cold calculating villian....A scholar, learned in history and war.
Now if this was possible. If Snoke did in fact watch the rise and fall of the galactic empire through study, and not actual experience, then it could mean he isn't as old as we thought.
Suppose now, that Snoke was Vader's force creation. We all know that Vader was fascinated with Plageuis' work. His need to understand it helped pave his path to the darkside.
My theory suggests that Vader was successful in recreating Plageuis' life creation experiment. He was the son Vader thought he never had. Vader made him 7 feet tall, with catlike speed and reflexes. Vader groomed him through studies of the force, and history, and war. He did so in secret... It was his plan to overthrow the emperor with Snoke at his side.
But then things changed. Luke Skywalker, his real son was discovered. Vader decided to end Snoke, and have his and Padmes son by his side instead. This likely occurred between ESB and ROTJ.
Vader thought he killed Snoke but he barely survived. Thiis is the reason he appears so mangled, not because hes old. His real age is somewhere close to Lukes.
This theory helps explain how Snoke was unknown until TFA. How he is strong in the force. His intense hatred of Luke. Why he sees Vaders compassion for his son as what destroyed the empire.
