A Funny Cookie Recipe from Grandma Stina | Anna Bread Cookies

This was my first time seeing, tasting, and making this recipe. I wasn't sure if I did it correctly because it came out looking so weird! Apparently, this is how it is supposed to look, but it was cut in smaller pieces after taking it out of the oven (before it cools). I waited too long to cut it, so I just broke the large pieces into chunks. In this recipe, I added an extra ingredient of almond extract, which I am very glad I did because it gave another note of flavour. If I made it again, I would roll it into small balls to make individual cookies instead of long rolls. Super easy to make and it tastes a lot like shortbread but with coconut.

ANNA BREAD COOKIES RECIPE:
1/2 cup white sugar
1/2 cup softened butter
1/2 cup flour
1/2 cup potato starch
1/2 tsp baking powder.

Roll in long pencil shapes. Brush with egg white and roll in coconut.
Bake at 325 F for 20 minutes. After baking, while it is still warm, cut the long pieces diagonally into smaller portions before it hardens.

The Johnson Family Cookbook Project was conceived during 2020 when making a family favorite recipe was a way to feel close to the people we love. The project stalled for a while, but has revived in the making of this Youtube channel by Tayah and her son Roman. Tayah is the 7th of 13 grandchildren of Barb & Otto Johnson, with many great & great-great grandchildren in succession (including Roman) and the family continues to grow! Grandma Barb turned 96 years young in 2024. We dedicate this channel to her, her family (Ewaskui) and the whole Otto Johnson clan, spread all across Canada and the USA. Our goal is to compile these recipes into a written book including family history and memories (God willing..!)
