Brine Recipe:
To 1 quart of water, add ¼ cup kosher salt & ¼ cup brown sugar

In this video, I show how to make smoked salmon. I’ve been using this method of smoking fish for over 30 years to smoke tuna belly, salmon, Pacific barracuda, etc. This smoked salmon combines the natural flavor salmon with a salty and sweet brine (recipe included). I also share my homemade drying box which is used for drying the brined fish, and cooling off the final smoked tuna bellies. This unique drying box is a must for keeping flies of the fish.
