Oven preheated for 30 minutes. I started with the gas only and after 10 minutes the wood started to burn too. At that stage I lowered the gas flame to don't have the oven too hot. Clementi is not recommending to use the oven in this way, probably for safety reason.
The stone temperature on the left side is higher and it was reaching the 500 + degrees Celsius, the gas burner flame is at lower level.
This pizza cooked with the stone at an average temperature of 440 degree Celsius in 75". I didn't put the pizza on the hottest part of the stone and I avoided to get too close to the flame. You can increase the temperature further and cook the pizza in 60" or less but I try to avoid to get black burned spots.
It is handy to have the gas in combination with the wood, when you remove the pizza, you can increase the gas flame to recover the stone temperature and bring it back to 440 degrees.
