Key Lime Pie Bars are just like the iconic pie, with a tropical graham cracker crust and a silky smooth, tart and creamy filling.


-Ingredients
-Crust
Graham Crackers (120 g) About 8 full crackers
Macadamia Nuts, toasted ¼ cup (40 g)
Toasted Coconut ½ cup (50 g) (Unsweetened)
Sugar 2 tbsp (25 g)
Butter ¼ cup (56 g)
-Filling
Sweetened Condensed Milk (397 g) [1 standard 14 oz can]
Lime Zest 1 Tbsp (6g)
Lime Juice ½ cup (120 g)
Sour Cream ¼ cup (60 g)
-Whipped Cream Topping
Heavy Cream ½ cup (113 g)
Powdered Sugar 2 Tbsp (15 g)
Vanilla Extract ½ tsp (2.5 g)


Directions
1. Crush crackers, macadamia nuts and coconut into fine crumbs. Combine graham cracker mixture, sugar and melted butter until evenly moistened. Press mixture into bottom of a parchment lined 8×8 inch (20×20 cm) pan to form crust.
2. Bake crust in a preheated 350º F (177º C) oven for 12-14 minutes or until crust begins to brown. Cool while preparing the filling.
3. Combine sweetened condensed milk and sour cream; stir in lime juice and zest until incorporated and mixture thickens. Pour over cooled crust.
4. Bake in a preheated 350º F (177º C) oven for 15-18 minutes or until the filling is set with a slight jiggle in the center. Cool to room temperature then refrigerate to chill thoroughly.
5. To make the whipped cream, whip heavy cream, vanilla, and powdered sugar on medium speed until the mixture begins to thicken. Increase speed to high and continue whipping until stiff peaks. Spread or pipe onto bars.
