A super easy Chinese eggplant salad(涼拌茄子) with tips and tricks of keeping the aubergine perfectly purple and appetizing. The eggplant is steamed to a creamy, melt-in-your-mouth texture, then seasoned with fragrant sizzling oil dressing, this classic savory Chinese aubergine salad is simple yet delectable. This dish is perfect for summer and easy to make ahead if you’re entertaining guests. This Chinese hand-shredded eggplant salad also tends to absorb more dressing than cut pieces. In fact, hand-tearing is a very popular technique used in Chinese cuisine. Have you heard of famous dishes like hand-torn chicken (手撕鸡), hand-torn cabbage (手撕包菜) and hand-torn noodles (面片)?

Chinese Appetizer Eggplant Salad 不废油的拌茄子冷吃热吃皆可

Ingredients:
Eggplant 3
Garlic 3 cloves
Green Onion 1 bunch
Rice Vinegar 1/2 tbsp
Salt 1/2 tbsp
Hot Sizzling Oil 2 tbsp

材料:
茄子 3条
大蒜 3瓣
葱 1束
米醋 1/2汤匙
盐 1/2汤匙
滚油 2汤匙

Seasonings:
Oyster Sauce 1 tbsp
Fish Sauce 1 tbsp
Thai Chili Sauce 2 tbsp
Paprika Powder 1 tsp
Sesame Oil 1 tsp
Salt Add some for taste
Black Pepper Add some for taste

调味料:
蚝油 1汤匙
鱼露 1汤匙
泰式辣椒酱 2汤匙
辣椒粉 1茶匙
麻油 1茶匙
盐 少许
黑胡椒 少许

Instructions:
1. Cut eggplant into finger-length sections, then center cut in halves.
2. Soak it with some salt & vinegar water to prevent the purple skin from turning brown.
3. Chopped green onion, set aside.
4. Boil water, placing the steam basket into a pot/wok. Once the water is boiling, put the eggplant on the steaming tray.
5. Steam the eggplant for 5 minutes until it is tender but not mushy, set it aside to cool down a bit.
6. Hand shred or tear the eggplant into strips, put it in a big bowl.
7. Add the seasonings(oyster sauce, fish sauce, Thai chili sauce, paprika, sesame oil, salt, black pepper), grating garlic, put the chopped green onion last.
8. Pour oil into a stainless steel sauce ladle, place it on the edge of the flame to prevent burning. Once you see white smoke, turn off heat & transfer to the ingredients bowl.
9. Carefully pour hot sizzling oil on top of the green onion, then mix well the eggplant, and enjoy the salad.

9. 小心地将沸腾的油倒在葱花上,然后拌匀茄子,享受沙拉。
