आज मसाला किचन मे बन रही है अमृतसरी मसाला वडी/उड़द दाल वडी और मूंग दाल की वडी | ऐसे बनाए स्वादिष्ट और मसालेदार मूंग दाल वड़ी | मूँग दाल वड़ी बनाने का बहुत ही आसान तरीका | दाल की बड़ी बनाने का एकदम परफेक्ट तरीका | इस तरह बनाए मूंग दाल की मसाला मंगोरी और करें साल भर स्टोर | वडी -सालो ख़राब न होने वाली वडी बनाने का देशी तरीका | पंजाब की फेमस अमृतसरी उरद दाल मसाला बड़ी बनाने की सही विधि | यूपी स्टाइल उरद की वड़ी | छत्तीसगढ़ की प्रसिद्ध वड़ी, अमृतसरी वड़ी, अदौरी वड़ी, पंजाबी वड़ी, सिंधी वड़ी, राजस्थानी वड़ी, उरद दाल की वड़ी, सोया वड़ी, मूंग दाल वड़ी, शेयर करना न भूले | मसाला किचन | पूनम देवनानी रेसिपी
INGREDIENTS:
For Urad Dal Vadi:
White Urad Dal(सफेद उड़द की दाल) - 3 Bowls
Fennel Seeds(सौंफ) - 1/4 Bowl
Dried Coriander Seeds(सूखा साबुत धनिया) - 1/4 Bowl
Dried Fenugreek Leaves(कसूरी मेथी) - 1/4 Bowl
Cumin Seeds(जीरा) - 1/8 Bowl/2 Tbsp
Black Pepper Powder(काली मिर्च पाउडर) - 1 Tbsp
Asafoetida/Hing Powder(हींग पाउडर) - 1 Tbsp
Black Cardamom(काली/बड़ी इलायची) - 3 to 4
Green Cardamom(हरी इलायची) - 3 to 4
Black Pepper(काली मिर्च) - 1/4 Bowl
Dried Whole Red Chili(सूखी साबुत लाल मिर्च) - 1 Bowl
For Moong Dal Vadi:
Yellow Moong Dal(पीली मूंग दाल) - 2 Bowls
Salt (नमक) - As per taste
Red Chilli Powder(लाल मिर्च पाउडर) - As per taste
RECIPE:
For Chilli Flakes, in a mixer jar, put some Dried Whole Red Chilli & coarsely grind it & chilli flakes are ready to use.
For Masala, keep the pan on the flame, put some Fennel Seeds, Dried Coriander Seeds, Cumin Seeds, Asafoetida/Hing Powder, Black Cardamom, Green Cardamom, Black Pepper in it & dry roast them. Then take them out on a plate, keep them for cooling down & then coarsely ground them in a mixer jar. then add Dried Fenugreek Leaves & Black Pepper Powder, Chilli Flakes in it & mix all well.
For Urad Dal Wadi, take Some Urad Dal, wash & soak it for 5 to 6 hours. put the soaked Moong Dal in the mixer jar & add some Water to it. Grind the dal coarsely & take it out in a big parat/plate. Now beat the dal rigorously in one direction & make it fluffy. Then add some Asafoetida/Hing Powder, coarsely ground Masala & mix all well. Then take a steel thali & keep polythene on it. Keep a bowl of water nearby and wet your hand with that, take a little amount of urad dal batter in hand, start making in big sizes over a plate keep some space in between. Repeat this until the batter gets finished (You can also do this with a spoon).
For Moong Dal Wadi, wash Moong Dal & soak it for 5 to 6 hours. Grind the dal in the mixer jar & take it out in a bowl. Add some Salt, Red Chilli Powder & mix well. Make small Badi/Vadi by using a spoon. Let the badi/wadi gets dry under Sun for 2 days, remove all badi/wadi from polythene turn over and dry for 1 more day or until completely dried. In this way, 2 types of wadi/badi will get ready to use.
Tip:
Drying time depends on the size of the wadi(badi).
Store in an airtight container and use for up to a year.
You can adjust the spices to suit your needs.
