Avial is a mixed vegetable curry popular in south India especially Kerala. The specialty of this dish is that it is cooked in coconut oil and seasoned with coconut and curry leaves which gives a heavenly taste and aroma.

Ingredients:

Beans 1 cup
Carrot 1 cup
Cucumber 1½ cups
Drumstick 1 cup
Lemon sized tamarind
Eggplant/brinjal 1 cup
Yam ½ cup
Snake gourd 1½ cups
Grated coconut 2½ cups
Coconut oil 3 tbsp
Green chilies 5
Garlic 10 pods
Jeera/Cumin 1 tsp
Turmeric powder ½ tsp
Plantain 2
Onion 1
Tomato 1
Mustard seeds 1 tsp
Curry leaves
Salt
