Yield of Recipe : 9 Cheese Slices (250g)
Prep. & Cooking time :- 15 - 20 minutes
Setting Time :- 5 to 6 Hours

Ingredients:
* Full Fat/ Low Fat Milk (Raw/Pasturised) - 1.5 litre
* Vinegar/Lemon Juice - 5 to 6 tbsp
* Citric Acid :- 1/2 tsp (2.5g)
* Baking Soda - 1/2 tsp (2.5g)
* Water - 1/2 Tbsp
* Salted/Unsalted Butter :- 1 Tbsp
* Milk - 1/4 Cup (55 ml)
* Salt - 1/4 tsp (or according to taste)
* Food Color (optional)

Method :-
1. Grease Baking tray with Butter
2. Heat milk in a vessel on low heat, stir continuosly, keep checking temperature. it should be between 45 to 50 degree celcius or luke warm , once the milk luke warm or reach on defined temperature, switch off the flame and add the Vinegar/ lemon juice gradually, stir until the milk starts to curdle and the whey separated from the milk solids.
3. Strain the cheese, squeeze out all the whey from the cheese
4 In a bowl add water & citric acid mix it well, then add Baking soda, make clear sodium citrate solution.
5. Take blending jar, add Cheese, sodium citrate solution, butter, Milk & salt. Blend & make a smooth mixture.
6. Take cheese mixture into a heatproof bowl and cook cheese mixture by double boiling method for atleast 5 to 8 minutes.
7. lastly add food color and mix it well.
8. spread mixture into greased tray, cool in room temp. then set cheese in refrigature for at least 5 to 6 hrs.
