RECIPE:
INGREDIENTS:
1 cup all-purpose flour
3 tbs. sugar
1 ½ tsps. baking powder
1 tsp baking soda
½ tsp salt
4 eggs
2 cups buttermilk
½ cup butter, melted
½ lb smoked bacon, cooked crisp and diced

WALNUT BUTTER
1 cup walnuts soaked for 24hours and drained
1 ½ tsp canola oil
1 tbs honey
1 tbs butter
A pinch of salt

MAPLE JELLY
¾ cup maple syrup
3 oz cold water
1 cup apricot jelly

METHOD:
Make the maple jelly and refrigerate combine all ingredients and stir super-fast until mixed properly together.
Make the walnut butter by toasting the walnuts in a pan for 12 minutes on medium heat then add to a blender. Blend till they are crushed. Slowly add honey, water, oil, and butter and blend until mixed thoroughly.
Combine dry ingredients (flour, baking powder, sugar, baking soda, salt) in a large mixing bowl)
In a separate bowl, whisk together wet ingredients (eggs, buttermilk, melted butter) then slowly add to the dry ingredients until mixed thoroughly.
Heat skillet over medium heat and coat with oil. Use a serving spoon to carefully place a spoonful of batter onto the skillet allowing the batter to fall off the spoon and form an even circle.
Cook until the bottom side is nicely brown then sprinkle crisp bacon generously onto the pancake and flip immediately to seal the other side.
Dress pancakes with walnut butter and maple jelly and serve
