For deep flavours soak fruit for over 1 year but if unable to do so you can use the below - the results will be similar

Fast Soaked Fruit:
300g raisins
150g mixed fruit
150g glace cherries
75g prunes
75g mixed peel
1 cup and a little bit more of apple juice :-)

If using alcohol you can use 1/3 Rum or Brandy to 2/3 juice (for best results use pure juice, not concentrate)

Warm in microwave for about 1 min 30 mins (or longer - you'll have to guage it).
You can use warm mulled wine & little rum mixed in to pour on top after it's finished baking

Roughly blend 3/4 of mixture (don't blend too fine, blend all prunes and cherries), leave other 1/4 of fruit whole.

Cake Ingredients:
115g butter
1 1/2 cups dark brown sugar
1/2 cup vegetable oil
3 tbps molasses or Browning (if using browning you may need slightly more - you can add when mixing to get it to the dark color wanted
1/2 tsp salt
1/2 tsp All spice
1/2 tsp Cinnamon
1/2 tsp nutmeg
3 eggs
1/2 tsp baking powder
1 2/3 Cups (abt 300g) self raising flour
3/4 cup walnuts chopped (optional)
