Noodle Salad (Mien Salad Inspired)

Ingredients

To cook the ground pork:
80z ground pork
2-3 TB cooking oil
1/8 tsp salt

To cook the vermicelli noodles:
3-4 bundles vermicelli noodles
Boiling water to soak noodles

To mix the dressing:
6 egg yolks
3/4 cup zesty Italian dressing
3 TB thousand island dressing
1 TB ranch dressing
1/2 TB lemon juice freshly squeeze
2 TB tamarind powder
1 TB fish sauce
1/2 TB sugar (optional)
2-3 tsp grounded red pepper flakes
2 pinch (or more)grounded Szechuan peppercorn
2 TB larb seasoning mix
1/3 cups crush peanuts (optional)
1-2 TB water (if dressing feels thick)

Red and green bell peppers
