I smoked up a whole packer brisket, using their pecan wood splits. I set my smoker to 275 degrees, I smoked the brisket until it reached 165 internal temperature, then I wrapped it in foil and removed it until 200 degrees internal temperature. I rested the brisket in my cooler with a towel wrapped around it, with the foil still on the brisket. After 2 hours of resting I sliced it up. Brisket came out incredible, the delicious Smokey taste from the pecan complimented the brisket really well. I seasoned the brisket with just salt and black pepper.
