Simple and healthy oats omelette recipe for you:

Ingredients:
- 1 cup rolled oats
- 2 eggs
- 1/4 cup water
- 1/4 cup chopped vegetables (such as bell peppers, onions, spinach, mushrooms, carrots, tomatoes)
- Salt and pepper to taste
- coriander

Instructions:
1. In a bowl, mix the rolled oats,water soak the oats in water for 10mins
2. Let the mixture sit for a few minutes to allow the oats to absorb some of the liquid.
3. Add all chopped veggies and spices, Heat a non-stick skillet over medium heat and coat it with cooking spray or a bit of oil.
4. Pour the oat mixture into the skillet, spreading it out evenly.
5.Cook the omelette for about 3-4 minutes, or until the edges start to set.
6. Carefully flip the omelette and cook for another 2-3 minutes, or until cooked through.
7. If desired, sprinkle grated cheese over the omelette and let it melt.
