Kanika is a sweet rice dish, popular as one of the bhog of Chappan Bhog. Chappan bhog is a mahaprasad that has 56 food items offered to Lord Jagannath in the holy temple of Puri. It's offered to Lord Jagannath as part of the morning meal. Kanika food is widely popular in Odissa and West Bengal. In West Bengal, it's very similar to Mishti Pulao.

This is Bongo Radhuni's attempt to the best of our knowledge. Cooking Kanika for Chappan Bhog might involve Puja-specific rituals. Please let us know in the comments if you are aware of any specifics about Kanika bhog.

Ingredients:
1. Basmati Rice 1 cup
2. Ghee 3 tbsp
3. Sugar 1/2 cup
4. Salt 1/2 tsp
5. Turmeric Powder 1/2 tsp
6. Cloves 5 pcs
7. Black Pepper 7 pcs
8. Cinnamon 2 pcs
9. Green Cardamom 4 pcs
10. Black Cardamon 1 pc
11. Nutmeg Powder 1/2 tsp
12. Cashew Nuts 1/4 cups
13. Raisins 1/4 cups
14. Bay leaves 2 pcs
15. Cardamom powder 1/4 tsp
16. Cinnamon powder 1/2 tsp

Procedure:
1. Add 2 tbsp ghee to a pan and heat until it's melted.
2. Add Green Cardamom, Black Cardamom, Cinnamon, Black Pepper, Cloves, Bay leaves.
3. Add water soaked and strained rice, add sugar and salt to taste.
4. Add water as needed.
5. Add Turmeric powder, Cinnamon powder, Cardamon powder, Nutmeg powder and mix well.
6. Add 1 tsp ghee and mix well.
