Ingredients :

Candies pork fat(冰肉):
100g pork fat,diced(豬板油,切粒)
3 tbsp sugar(糖)
1 tbsp rice wine(米酒)

Store in the fridge for at least 1-2 weeks before using.

Skin (皮料):
300g plain flour (普通面粉)
1 tsp alkaline water (碱水)
180g maltose (麦芽糖)
6-7 tbsp oil(油)

Filling (馅料):
100g candied pork fat(冰肉)
100g candied winter melon, chopped (冬瓜糖,切碎)
60g melon seeds, toasted (瓜子仁,烘香)
60g sesame seeds,toasted (芝麻,炒香)
4 cubes fermented soya bean curd, mashed(南乳,压烂)
2 tbsp juice of fermented soya bean curd (南乳汁)
3/4 tsp pepper(胡椒粉)
3/4 tsp salt(盐)
3/4 tsp five spice powder (五香粉)
60g caster sugar (细砂糖)
100g fried glutinous rice flour (糕粉)
2 tbsp garlic, chopped (蒜茸)
80ml water(水)
1/2 tbsp sesame oil (麻油)

1 egg beaten, for glazing
1 粒蛋,打散,涂面用
