下茄苳順師味道裡的長情

以前的人很長情,一輩子只會喜歡一個人;反覆聽著同一首老歌;甚至幾十年來在同樣的日子愛吃同一道菜。順師因為豬腳麵線,而讓宮廟指定辦桌幾十年,同桌有位老太太,每年都來吃平安宴,嘴裡喊著我多吃點,但是,筷子不斷地夾走豬腳麵線,眼見就快見底,為了做出好的調查報告,一邊咪咪笑著對老太太點點頭,一邊趕緊伸出筷子夾上一口品嚐味道,可不能中了親切的老太太緩兵之計(還是聲東擊西?)。

將豬腳放入口中,與奶奶的回憶湧上腦海,那醬油膏裡生蒜頭的嗆味好熟悉,接下來幾道菜,小時候的回憶躍然出現,炒三鮮的乾魷魚與醃竹筍乾的香氣,演奏出望春風,是很傳統的風味,幾十年沒再辦桌上出現這樣的風格了,魚翅羹的魚翅份量非常的多,口口都可以吃到充滿膠質的魚翅,和風偏甜的鰻魚冷米糕,彷彿窺探到台南溪北地區的童年,很少吃到辦桌米糕是冷的作法,突然眼前為之一亮。

下茄苳的老菜辦桌實在太珍貴了,又發現另外一種辦桌的風格,內心驚喜不已,連擺盤方式都那麼的復古,充滿版畫印刷的時代氣氛。順師跟許多傳統總鋪師相同,新的一代不再接手,這樣的風味也不知道能存在多久,老一輩的總鋪師都將菜譜記在心裡,只會在每次辦桌時,才調動心裡的圖書館,翻閱食譜,讓老味道在宴席重現,有甚麼方式能更好保存這種餐桌上的無形文化資產呢?
