South Asian–Style Chicken Subway Sandwich:
Ingredients
For the chicken:
• 500 g boneless chicken (thin strips)
• 2 tbsp yogurt
• 1 tbsp ginger-garlic paste
• ½ tbsp black pepper
• ½ tbsp red chili powder
• ½ tsp salt (adjust to taste)
• 1 tbsp tikka masala
• ½ tbsp coriander powder
• ½ tsp cumin powder
• 1 tbsp lemon juice
• 1 tbsp oil or butter
For the sandwich:
• 4 Subway-style bun
Slices of:
• Lettuce
• Tomatoes
• Cucumbers
• Onions
• Green bell peppers
Spicy Chipotle:
• 4 tbsp mayo
• 2 tbsp red chili sauce
• pinch of smoked paprika
Chipotle Southwest Style:
Ingredients:
• ½ cup mayonnaise (thick, full-fat works best)
• 1 tbsp tomato ketchup
• 1 tbsp mustard (yellow or dijon)
• ½ tsp lemon juice
• 1 tsp smoked paprika (essential for the Subway smoky flavor)
• 1 tsp red chili powder (adjust spice)
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp sugar (balances flavor)
• Salt — a small pinch
• 1–2 tsp water (to thin it slightly like Subway’s)
Instructions
Mix yogurt, ginger-garlic paste, spices, lemon juice, and oil.
Add chicken strips and marinate for at least 30 minutes (longer = better).
Add mayo, red chili sauce and pinch of smoked paprika. Whisk until smooth and set aside.
Add mayo, ketchup, mustard, paprika, chili powder, garlic powder, onion powder, sugar, and salt to a bowl.
Whisk until smooth.
Add 1–2 tsp water slowly until it reaches Subway’s slightly runny sauce consistency.
Taste and adjust spice or tang.
Chill for 30 minutes, the flavor becomes perfect.
Heat a pan without oil.
Cook chicken on medium heat for 6–8 minutes until tender and slightly charred.
Place sub buns over the table.
Spread your Southwest chipotle sauce.
Load with lettuce, tomatoes, onions, cucumbers, capsicum and Add mozzarella Slices.
Add cooked chicken strips.
Add spicy chipotle sauce and add one more South-West Chipotle sauce for a South Asian kick.
Close the sandwich, press gently, cut, and enjoy!
For a spicier taste: sprinkle chaat masala on the veggies.
