Beef Caldereta. Short ribs simmered to perfect tenderness in tomato sauce with bursting flavors from spices and chicken liver filled with carrots and potatoes. This classic Filipino dish is hearty and perfect for family get-togethers.

Ingredients:

2 lbs beef short ribs
¼ cup soy sauce
1 tbs worcestershire
1 tbs ground pepper
½ lemon (or 3 pcs calamansi)
2 pcs carrots, sliced
2 pcs medium potatoes, sliced
1 medium onion, diced
5 cloves of garlic, minced
1 cup diced tomatoes (that’s about 3 medium tomatoes)
½ cup tomato sauce
2 tbs ground chicken liver
½ cup beef broth
3 pcs dried laurel leaves
1 tsp red pepper flakes
1 tsp salt
½ cup, water
2 tbs Eden cheese, grated (it’s a popular Filipino cheese that you can avail at any Filipino stores in the US—it has a very light taste and not as salty as cheddar)
2 tbs avocado oil (you may use other cooking oil of your choice)

Process:

1. In a bowl, marinate the short ribs with soy sauce, Worcestershire, pepper, and lemon. Set aside for about 20 minutes or so.
2. In a wide skillet, heat oil and fry the meat quickly for two minutes on each side then remove off the pan. Quick note, this browning process is called the Maillard reaction. The chemical reaction between amino acids & reducing sugars that gives browned food its distinctive flavor.
3. In the same pan, fry the carrots and potatoes for about 4 minutes until it’s a little golden brown then set aside.
4. In the same pan, sauté onions and garlic until fragrant.
5. Add diced tomatoes, tomato sauce and ground chicken liver then pour the beef broth and excess marinade liquid. Put the laurel leaves and red pepper flakes. Ground pepper and salt to taste. Stir gently and simmer for about five minutes.
6. Put back in the short ribs. Add a little bit of water. Cover and continue to simmer for about 30 minutes or until the meat is tender.
7. When the meat is ready, add the grated cheese, carrots, and potatoes. Continue to simmer for about 8 minutes until the potatoes are completely cooked.
8. Turn off the heat and serve generously.
9. It’s best to pair it with steamed rice.
