Ingredients:
============
500g mutton, cut into bite-sized pieces
2 tbsp vegetable oil
1 large onion, finely chopped
2 garlic cloves, minced
1 inch ginger, grated
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
Salt to taste
2 medium-sized tomatoes, chopped
1/2 cup water
Fresh coriander leaves, chopped (for garnish)

Instructions:
============
Heat the vegetable oil in a pressure cooker over medium-high heat.
Add the chopped onion and sauté until it turns golden brown.
Add minced garlic and grated ginger, and sauté for a minute.
Add the mutton pieces and cook until it turns brown.
Add cumin powder, coriander powder, turmeric powder, red chili powder, and salt to taste. Stir well.

Add chopped tomatoes and cook for 5 minutes or until the tomatoes turn soft and pulpy.

Add water and mix well. Close the lid of the pressure cooker and cook for 10-15 minutes or until the mutton is tender.

Once done, remove from heat and let the pressure release naturally.

Garnish with chopped fresh coriander leaves.

Serve hot with steamed rice or naan.
